some pictures from the distillery district

this morning/afternoon we drove down to the distillery district in toronto. they have a bunch of really cool unique shops there with tons of brick buildings, cobblestone roads, and patio lights strung throughout. we window shopped for a bit and then had lunch at el catrin, which is one of my favourite mexican places. it was nice to spend time with family and check out some new shops!

2016 goals

pictures courtesy of my sister christine

here are my goals for 2016. hopefully i work towards them over the year!

01. cut out alcohol & smoking
some vices of mine that i think would be healthy to cut out for a year. the drinking thing might be the most difficult {sorry friends}, but i really want to give it a try!

02. eat a well balanced diet
because i was legitimately concerned i was going to get scurvy first semester. (p.s. i found this article really interesting when it comes to making diet changes)

03. develop an exercise routine
i feel like this is on everyone's list, but i really want to find something that i enjoy and can stick with. i'm hoping pilates continues throughout the year and hey, maybe i'll finally develop some sort of gym routine?

04. devote time to grow spiritually - whether it be attending church, watching online sermons, etc.
this has been on the back of my mind for a really long time. it's something that often falls to the bottom of my "to do list", but i think it's really important. so i want to make a conscious effort to make time for this.

05. limit recreational computer time to approximately five hours a day {i'm trying to be realistic here}
i am THE worst at netflix binging and checking facebook, twitter, instagram, and us weekly every 2 minutes. and it usually leads to a lot of wasted time. so i really want to cut down on that. and five hours a day would really be cutting down....

06. pay off my credit card bill
i've been getting better at managing my money since moving out and this would be a huge accomplishment of mine if i could not only pay it off, but keep it paid off throughout the year!

07. spend time each day on myself {hello reading, face masks, walks, etc.}
because i think this is so important, especially when it comes to managing stress.

08. improve my skin care routine
i have been trying for YEARS to get my acne and discolouration under control and i think i'm getting close to nailing down a skin routine that works for me. but consistency is key kids, and that is always my downfall.

09. drink 8 cups of water every day
not only is it necessary to stay alive and healthy but really i should have got this figured out by now but i ALWAYS forget to drink water. seriously, sometimes by the end of the day i realize i've only had one glass of water the whole day.

10. develop a morning routine
i am horrible in the mornings! i always wake up feeling terrible and sleep in like nobody's business. if i could start my day at 1pm everyday i would be happy. but this is not realistic and i think i would feel so much better if i was able to develop a consistent morning routine.

do you guys set 2016 goals? i know a lot of people are really against it, which i totally understand, but i always enjoy spending some time thinking about how i can improve and i find if i write it all down i'm more likely to stick with it. i'd love to hear what some of your goals/resolutions are!

happy new year!!

a summary of my christmas break so far….

- wearing the same pyjamas for an embarrassing number of days in a row
- living off of homemade cheese pastries
- taking a bath at least once a day (but often twice)
- sleeping in and not feeling bad about it
- giving my skin a major break from makeup
- watching lots of netflix… but that isn’t really break specific

hope everyone is enjoying their holidays!

good morning!

a little hello from fynn this morning who is obsessed with carrying this toy around the house all day every day.

we're going to arizona!!!

picture found from google

hello friends!

i know it's been forever since i've posted here..... with finals and christmas celebrations things have been a little bit crazy. but i am so excited to announce that my sister, dad, and i are going to be going to arizona the end of january! i am so excited to be traveling there, especially because it is going to be totally different from anywhere i've ever traveled before. i am in the process of trying to narrow down all of the things i want to do (there are so many options!!!).

can't wait to share more about our travel plans, and i promise to update you guys about the last month or so (still can't believe i managed to go that long without blogging!).

talk to you soon,

liz xo

cutting down our christmas tree

it's tradition for us to cut down our christmas tree on the first saturday of december every year, so last weekend my sister, mom, and i all drove out to the christmas tree farm! on our way over we stopped at starbucks and grabbed our favourite holiday drinks (the caramel brule latte for me!). when we got to the farm it was packed! it seemed like everyone had the same idea as us to get their christmas tree, and the warm weather probably had an effect too.

the whole time i felt like we were the biggest divas ever - with our starbucks red cups in hand, me lugging around my camera and tripod, my mom and i wearing our hunter boots.... i could go on. i thought the whole thing was hilarious.

we ended up finding our tree in the very back corner of the lot. when looking at all of the trees the normal ones we usually choose from just looked way too small this time around... so we decided to upgrade to the next size up. and let me tell you, the tree we picked looked a lot smaller when it was in the field compared to when we cut it down. while we were dragging it back to be wrapped up people were stopping and saying how big our tree was. that should have been a sign that we had overcommitted.... but once you cut down the tree i feel like you just have to go with it at that point ;).

when we got out tree home and put it up in our living room it ended up taking up almost half the room it was so big!! but what's christmas without a ridiculous christmas tree? ;).

i was feeling really festive and put up the rest of our christmas decorations around the house - i'll have to go back and get some pictures to put up here soon.

i hope everyone is getting into the festive spirit. i can't wait for christmas to come! {it's my favourite holiday of the year!}

merry christmas!

more christmassy weekend pictures

here are a few pictures from this weekend when my friends and i hung out and did lots of christmassy things!

i'm almost done decorating my apartment... i still want to make a couple more banners and i'm on the fence about whether or not i'm going to get a real christmas tree. i really want one, but my apartment is pretty tiny and also those things are expensive... so we'll see.

happy tuesday!

it's beginning to look a lot like christmas

over the weekend we had our first big snow fall and it has definitely got me in the christmas mood now! i spent the weekend at my parents place and for the most part i was camped out on the sofa next to the fire watching christmas movies on t.v. while it snowed outside {basically what i would do all of december if i could}.

on sunday i started decorating my apartment for christmas. i know it's super early for christmas decorations, but i feel like everyone is decorating early this year so i had to jump on the bandwagon, and with this weather i can't really blame them. i looks like a winter wonderland outside now and i'm loving it!

i had friends over sunday night and we made a gingerbread house and made christmas paintings and had starbucks holiday drinks and christmas treats. we also went and saw the night before in theatres which was definitely not your average christmas movie, but it was really funny {if you like seth rogan's type of humour}.

i hope you guys had a wonderful weekend. i'm curious, have you started putting up decorations yet?

it’s that time of the year again

even though it’s not even the end of november yet it feel like everyone is totally getting into the christmas spirit super early. i have plans to get my apartment decorated this weekend if everything works out (fingers crossed), and i’m hoping that really kick starts the festivities this year. we’ve had unseasonably warm weather this year and so it hasn’t really felt too ‘christmassy’ here, but it looks like that might change since the forecast tomorrow is calling for snow. i can’t wait for all of the holiday stuff to arrive!!

wishing everyone a happy weekend!

happy champagne friday!!

i think i've mentioned before that over the summer i use to celebrate champagne friday's with my aunt and uncle... but just in case i haven't i'll explain it now. basically every friday they had a tradition to have champagne on friday evening to celebrate getting through the week. so while i was living with them i got to partake in the tradition as well - i mean i'm not one to turn down free champagne!

and then last weekend i went back up to lindsay visit everyone and as a birthday gift my aunt and uncle bought me champagne and some champagne flutes so now i can bring the tradition back home with me! {yay!!!!!!}

so as if friday's weren't great enough i now get to celebrate in style.

happy champagne friday everyone! cheers!!

"There's no such thing as bad weather, only the wrong clothes."

i read that swedish saying in an article a couple of weeks ago and it really got me thinking about how i want to tackle my winter capsule wardrobe. now, they're saying that this year's winter is suppose to be pretty mild... but i'm still scarred from the last two polar vortex winter's we've had so i want to make sure i'm prepared for the weather! while most of the stuff on my wish list is way out of my budget, it's still good inspiration.

i want to stock up on some warm sweaters that are light enough to layer, as well as some new jeans {i love these ones from old navy because they're still distressed without holes, so hopefully they'd be warm enough for winter!}. ps. how cute are those sorel boots with the pink accent!!?

thanks el nino

thanks to el nino, which i'm told is the reason behind these unseasonably warm temperatures today has been an absolute dream. the windows in my apartment are all open letting the warm breeze come through and bring some much needed freshness in here. i wore a sweater to one of my labs earlier this morning and have since changed into a t shirt because i was too hot. too hot in a sweater in november... what is this!?

and although i'm a big sucker for chilly fall days, i have to say i'm really enjoying this warm weather. it makes it a little bit easier to be patient for winter/christmas {is it just me... as soon as november rolls around i am ready for snow and christmas songs and hot chocolate...?}.

so here's to walking outside without having to layer up and pretending that four month of snow and cold aren't right around the corner ;).

late night studying

sometimes my friends and i get together for late night study dates. most of the time not much studying gets done. usually it consists of binging on junk food and gossiping or reminiscing. and so on sunday evening we found ourselves jumping from campus {where zero studying got done because other people around us were basically yelling the whole time} to a pizza place, to a pit stop at shoppers drug mart, and then finally at tim hortons. and while we all told ourselves we were studying, i think most of the time was spent chatting. and i'm 100% okay with that.

mid week check in

this picture really has nothing to do with the post other than the fact that i've been playing around with my camera during my sparse free time this week and have fallen in love with shooting RAW and playing around with the manual setting a bit more! {which will hopefully translate into more pictures/post here!}

hello. it's wednesday evening which means we are more than halfway through the week {thank goodness!}. this week could not be any crazier and i am going to be so thankful when saturday finally rolls around. this week has already had too much going on with trying to juggle school, and work, and having time to myself, and maybe even getting a bit of sleep in there if possible?

one of my priorities though, despite my crazy schedule has been focusing on self care. taking some time each day to really take a break from things. like giving myself a facial on monday night, to spending an hour reading a book {for fun, not school related}. little things like that aren't watching t.v. {which i've learned isn't really a 'break' for me, more of just a distraction} or constantly thinking about what project i need to be working on next. and let me tell you it has been doing me a world of good. definitely one of the reasons i've been able to stay relatively calm this week.

anyways, i hope everyone is having a good week so far, and i'd encourage you to try to take some time out of your day to truly relax and take a breather- trust me you'll feel much better.

everyone goes lighter for winter right?

on friday i had my hair done and i've now got a pretty solid ombre colour going on! i'm so happy with how it turned out and i'm even happier that i think i've finally found a hair salon that i love (after years of searching). so even though people normally go darker for fall/winter with their hair i am loving the lighter locks right now.

hope y'all have a good monday. my week is starting off with 2 hefty midterms.... wish me luck because i definitely need it.

so about a month ago or so there was this crazy bug going around and everyone was getting sick. cough, cold, fever, sore throat... you name it, people were not feeling it. and there i was, thinking to myself "that looks so rough, thank God i have an amazing immune system and can take a pass on this whole cold thing". and so there i was, thinking i was all that.

but that's all caught up to me now, because of course as reading week comes to an end i have caught a pretty nasty cold that is basically ruining my life {not to be dramatic or anything ;)}. i didn't think one person could cough so much in one day - like seriously lungs tone it down.

so i'm trying to get back on my feet asap because i have a midterm on tuesday and it would be the absolute worst to have to sniffle through the whole thing. not to mention studying is 10x worse when you're not feeling your best.

i'm hoping that all of the comfort food i have planned for this week, lots of tea and water, and the occasional ibuprofen and cold medicine has me back in no time. here's to hoping anyways!

p.s. if you live in canada please don't forget to vote tomorrow! just a little friendly reminder ;).

oh, and in case your wondering what kind of comfort food i'm planning on cooking up this week here's my tentative {because we know things never go as planned} meal plan:

monday: potato soup with biscuits

tuesday: broccoli quiche

wednesday: swedish meatballs with mashed potatoes and green beans

thursday: leftover night {yay!}

friday: country chicken with green beans and hasselback potato

i don't know about you... | 22nd birthday!

yesterday i celebrated my 22nd birthday! i decided to take the whole day off of work and studying and had a relaxing day with friends and family. i started off my morning listening taylor swift on repeat and then treated myself to coffee from my favourite coffee shop. then i went to the mall and bought a birthday dress and went home to make one of my favourite meals right now. and then i lounged on the couch watching netflix and pinteresting with no shame. it was great. for dinner that night i went out to taco farm with my family {yum!}. then we went back to their house and had cake and opened presents. and they bought be number balloons, which i know is a silly thing to get excited about but i love them! and then i ended the night with drinks at one of my favourite bars with friends!!

it was an awesome birthday and i'm so excited to see what this year has in store!

perks of having a park as my backyard

a couple pictures taken yesterday while i was in the park enjoying the perfect weather we were blessed with all weekend long. i'm trying to soak up as much as i can when it comes to all things fall because i know realistically we probably only have a good couple of weeks left of coloured leaves and pumpkin everything before we start getting snow. although then i can move on to peppermint mochas from starbucks and all things christmas related, which is basically the next best thing ;).

thanksgiving weekend update

it's currently 2am. i'm laying on the sofa after what feels like the longest day ever. but thanksgiving weekend was awesome. we had perfect weather here - like seriously, i couldn't have asked for anything better. i spent lots of time with friends and family. and i feel like i probably never need to eat again ;). hope everyone else had a great weekend! i'll be posting more details about my weekend in a post tomorrow, but right now i need sleeeeeep!

friday night lights

my brother and i made it out to my school's football game on friday!! i keep asking myself why i never decided to go to one of the games sooner - they are so much fun to attend! not to mention they lit off fireworks every time we scored a touchdown!!!

and tonight we attended our school's hockey game tonight, which was so much fun too! back to back sports games is the best way to start this weekend :).

long weekend excitement

london streets near kensington

i was going through pictures and came across this one taken in london this past spring. can you imagine if this was your house?! i mean, serious goals right there. every time i go through previous travel photos it reminds me how much i love travelling so i might just spend this weekend trying to figure out how to squeeze in some sort of trip this coming year.... hey, a girl can dream right?

i hope you all have a great friday and an even better weekend. and hey, if you're celebrating thanksgiving this weekend i hope you enjoy the extra day off ;). my long weekend has a shopping trip planned, a nice thanksgiving dinner, and some time with friends all in the mix, can't wait!

playing around with vsco cam themes

have you heard of instagram themes or vsco cam themes (an photo editing app)? i just stumbled upon it on a break from studying from a stats midterm and i'm obsessed! i may or may not have just spent the last half an hour editing all my favourite pictures trying out different "themes". try searching "vsco cam themes" on pinterest and you'll totally understand what i'm talking about ;).

and that's my public service announcement of the day.

messy apartment, what else is new. but it's my apartment and even though i've been here for a month it's still a bit surreal.

good morning friends!

it feels like this last week has been a bit of a whirl wind. from midterms beginning to quitting my job {more about that later!!}, life has been a little insane. i just have to get through the next couple of days and then my reading week will begin, thank the lord!

also, how crazy is it that thanksgiving is this weekend? seriously, time is just flying by. i need to start searching pinterest for some thanksgiving dessert ideas... if any of you have some excellent recipes you're hiding let me know! right now i'm thinking of doing some sort of pumpkin cheesecake thing, but we'll see how that goes. also, if anyone has been to the grocery store lately, am i the only one who thinks the baking aisle looks like people have been preparing for some sort of pumpkin apocalypse. all the pumpkin stuff has been raided through, shelves have been cleared - people are going crazy.

hope you all have a great tuesday :)

foggy fall mornings

i woke up this morning to see leaves that seemed to have burst in colour overnight and the perfect misty fog covering the park in my backyard. it's little things like this that make monday mornings just a little bit more bearable. this weather is a bit deceiving though because it totally looks like fall outside, so when i got dressed this morning in knee high boots, a wool sweater, and a rain coat to head out and run errands i thought i was good. forward to half an hour later and it felt like the middle of summer. seriously, humidity where did you come from?! so there i was walking back from the grocery store trying to balance a way too heavy grocery bag and a cup of hot coffee, feeling as if i was in some tropical rainforest or something. it was messy, but such is life. also can we discuss the fact that it's almost october!!! where did september go, time is flying by way too quickly.

a public service announcement: the best lasagna recipe

* photo from the daily crave blog

i had a ton of leftover shredded chicken from dinner last night and went to pinterest today to try and search up a recipe to use it. i came across this recipe from the daily crave blog, and i had to blog about it myself because it was so good! since living on my own, cooking for myself has been hit and miss... with perhaps a few more fails than wins ;). but this lasagna... guys, it's AMAZING! and super easy to make! i've copied the recipe down below if anyone want to give it a try. it takes about an hour all in and will leave your whole house smelling great. hope you enjoy it as much as i did! :)

Roasted Chicken, Rosemary & Goat Cheese Lasagna
  • 8 cooked lasagna sheets
  • 1 1.5 lb roasted chicken, meat pulled off and shredded (about 3 cups shredded chicken)
  • 4 tbsp unsalted butter
  • ¼ cup flour
  • 4 cups whole milk
  • 2 large stalks fresh rosemary (about 3 tsp), roughly chopped
  • 1/8 tsp ground nutmeg
  • kosher salt and pepper
  • 2 1/2 cups shredded mozzarella (2 cups plus ½ cup)
  • 8oz goat cheese log
Preheat oven to 350 degrees.
Cook the lasagna sheets and set aside while you prepare the sauce.
In a large saucepan melt butter over medium heat.  Whisk in flour and cook to make a roux, about 2 minutes.  While whisking slowly add the milk.  Add the rosemary, nutmeg and 1 tsp kosher salt, and cook stirring occasionally until thickened, about 5 minutes.  Turn heat off and stir in 2 cups of the mozzarella until smooth. Check seasoning, add more salt as needed, and add pepper.
Across the bottom of a greased 8×8 pan, spoon about ¼ cup of b├ęchamel sauce (just to cover the bottom), ¼ of the chicken, ¼ of the goat cheese and then arrange 2 cooked noodles next to each other on top (you may have to trim the lasagna sheets if you are using the standard length).  Repeat this three more times, ending with a layer of noodles on top.  Top with remaining ½ cup cheese, cover tightly with foil and bake for about 35-40 minutes or until the noodles are tender.  Remove foil and place under the broiler to brown the cheese on top.
